Experiments in our laboratory and under commercial conditions have shown this to be an important factor in determining the success or failure of a treatment for stuck fermentation.
We have tried to emulate commercial fermentation conditions as closely as is possible in a laboratory environment, but these experiments should be replicated on a larger scale to determine if the observations made here can be adopted in a winery situation.
We found that the concentration of ethanol at the end of the experiment was similar between strains, and was not related to the initial concentration of acetic acid in the ferment.

Using molecular biology techniques, the Aspergillus niger glucose oxidase gene was successfully integrated into a Saccharomyces cerevisiae (laboratory strain) genome.
The hydrogen peroxide that is produced leads to hyperbaric oxygen toxicity - a result of the peroxidation of the membrane lipid - and a strong oxidising effect on the bacterial cell, which is the cause of the destruction of basic molecular structures, such as nucleic acids and cell proteins.
